All our olives are processed within 24 hours after harvesting.

Our harvest begins in March, in early fall and it complys with the highest standards of the International Olive Council (COI, for its Spanish acronym). To ensure Lote 8 oil quality, olives are hand-picked and transported in plastic openwork boxes to ease air circulation. Once at the olive mill, they are classified by hand before pressing. This process speed is very important to ensure the final quality of the oil. That is why our olives are always processed within 24 hours after harvesting.
